Sushi Roll Specialist (Itamae)
Overview
We are seeking a skilled and passionate Experienced Fine Dine-In Restaurant Sushi Chef (Itamae) to join our culinary team. This role requires a dedicated professional with extensive sushi preparation expertise, fine dining experience, and a deep understanding of food safety and presentation standards. We are willing to provide training for the right person.
As a key member of our culinary team, you will craft authentic, innovative sushi dishes that delight our guests and uphold the highest standards of quality and artistry. Your culinary mastery will contribute to creating memorable moments for our patrons in a sophisticated, fast-paced environment.
Responsibilities
- Prepare and assemble a variety of sushi dishes with precision, artistry, and attention to detail, ensuring consistency and excellence in every plate.
- Develop and refine menu items, incorporating seasonal ingredients and innovative techniques to keep offerings fresh and exciting.
- Maintain impeccable food safety standards by adhering to proper handling, storage, and sanitation procedures at all times.
- Collaborate with the kitchen team to ensure smooth service flow, timely meal preparation, and seamless communication during busy hours.
- Manage ingredient inventory efficiently, monitor freshness, and place orders as needed to prevent shortages while minimizing waste.
- Train and mentor junior kitchen staff on sushi techniques, knife skills, food presentation, and safety protocols.
- Uphold the restaurant’s reputation for fine dining by consistently delivering high-quality dishes that meet or exceed guest expectations.
Skills
- Extensive experience in fine dining restaurants specializing in Thai or Japanese cuisine and sushi preparation.
- Strong knowledge of food handling, safety regulations, and sanitation practices within the food industry.
- Exceptional knife skills with the ability to prepare fish, vegetables, and other ingredients precisely and efficiently.
- Proven ability in menu planning, ingredient sourcing, and culinary innovation tailored for upscale dining environments.
- Excellent food preparation skills, including cooking techniques relevant to sushi and related dishes.
- Strong organizational skills with the ability to manage multiple tasks efficiently under pressure while maintaining attention to detail.
